What is Tie Guan Yin tea?

Tie Guan Yin tea looks very similar to Oolong tea and is often confused with Oolong tea. Essentially, Tie Guan Yin tea is classified as green tea. Because it has a low level of oxidation, at 10 – 15%. But Oolong tea has the oxidation of 30-40%, so this tea has taste of green tea so much. Moreover, it only uses tea leaves but not buds as usual tea.

How to process Tie Guan Yin tea

Because Tie guan yin tea tree is naturally soft, so it should be thoroughly cared. The tea tree sprouts at the end of March every year, and we harvested at the beginning of May. In addition, The tea tree shouts out buds year-round, but the yield is highest in spring, and the aroma is highest in autumn.

After drying, People  wrapped tea in white cloth, lightly twined and arranged tidy for 25 times. Then, drying with low temperature, caffeine in the tea leaves will sublimate, clustere into the white mist on the leaf surface.

This tea has bright yellow and clear. When enjoying tea, take small sips, slightly turn tongue to contact tea, then slowly swallow, and feel the aroma and bitter taste.

How to brew tea

First of all, you should preheat the teaset. Then, put tea to the teapot and the quanity depends on your taste (more amount of tea will give you the strong taste and oppositely)

After that, wake up tea leaves with the temperature is 95°C – 98°C (203°F – 208°F) for 15 seconds.

Then steeping tea leaves with the temperature is 95°C – 98°C (203°F – 208°F) for 30 -45 seconds, and pour out into each tea cup.

Finally, enjoy it. You can brew this type from 5 to 7 times.
